Mediterranean Salad





Hello Everyone and thank you so much for checking out this recipe!  I love different salads and always looking for a different recipes..I love quinoa but when I saw this recipe using bulgar I just had to try!  Bulgar wheat is a staple of Middle Eastern cuisine...it is rich in nutrients and vitamins..low in fat and high in fiber plus rich minerals and it's filling!
Here are the ingredients:  1 cup bulgar cooked /cooled | 1 cucumber cut up | parsley/mint to taste | 1/2 red onion diced | 1 can organic garbanzo beans rinsed/drained | 1 diced tomato or cut up cherry tomatoes |  feta cheese to taste | pistachios to taste ..that's it enjoy!!  xoxo Karen
